Tilli’s Salmon Balls
Tasty salmon bites with a savoury twist from cheese and parsley. Have fun creating and turn them into footballs – use spinach leaves as a base for a football pitch, mark out a pitch with sticks of red pepper, carrots, cucumber, cherry tomatoes etc and use houmous dip for the centre spot.

- 1 pack Tilda Sunshine Vegetable rice
- 1 cooked salmon fillet, flaked (or 1 tin red/pink salmon boneless)
- 1 egg beaten
- 1 tbsp chopped parsley
- 1 tbsp parmesan cheese, grated
- Breadcrumbs for coating
- Oil for shallow frying
How to make Tilli’s Salmon Balls

In a large bowl mix together the rice, flaked fish, parsley, cheese and egg with a fork

Form by hand into 12 small balls

Roll into breadcrumbs

Shallow fry for 8-10 minutes until golden brown all over
