Mixed Grain and Avocado Salad
Ready in less than 10 minutes, this tasty, quick and easy salad is the perfect addition to a BBQ on a warm, summer evening. It is also the perfect nutritious lunch that includes an extra source of fibre from our delicious Wholegrain Basmati and Quinoa.

- 1 pouch Tilda Wholegrain Basmati & Quinoa
- 1 small ripe mango, diced
- 1 ripe baby avocado, diced
- 20g shelled pistachios
- 60g pomegranate seeds
- 4 salad onions, thinly sliced
- 2 tbsp. white balsamic vinegar
- 1 tsp toasted sesame oil
How to make Mixed Grain and Avocado Salad

Heat the rice according to the pack instructions. Mix the mango, avocado, pistachios, pomegranate seeds and salad onions together and stir into the rice mix.

Whisk together the oil and vinegar and toss the salad. Serve in a large bowl, with raita on the side if you wish.

TIP For a quick raita, stir together Greek yoghurt, grated cucumber and torn mint.
