- Handful of Fresh Parsley
- Handful of Fresh Dill
- Handful of Fresh Mint
- Handful of Fresh Coriander

How to make Lentils, Lemon and Herb Rice Mezze Platter

Start by ensuring your brown lentils and lemon and herb rice are cooked. Chop a handful each of fresh parsley, dill, mint, and coriander.

In a large mixing bowl, add 250g of cooked brown lentils and 250g of cooked lemon and herb rice. Mix them well to evenly distribute the flavours.

Toss in the roughly chopped parsley, dill, mint, and coriander. These herbs will add a vibrant and fresh flavour to your salad.

Add a generous drizzle of extra virgin olive oil over the mixture. This will not only enhance the taste but also provide healthy fats.

Finally, season your lentil and rice salad with salt and pepper according to your preference. Mix everything thoroughly to ensure all the ingredients are well combined.
