How to cook Wild rice

Cook Tilda Wild rice perfectly every time with these simple and easy to follow instructions.

Bring out the nutty, earthy flavour and distinctive smoky aroma of Wild Rice, known as the ‘caviar of grains’, with these simple and easy to follow instructions. 

Characteristics:

  • Tilda Wild Rice has been cured, parboiled, dried, roasted, hulled, scarified, graded and cleaned – a lot goes into our bags. 
  • It’s made with natural ingredients (no artificial colours, additives or preservatives). 
  • Our Wild Rice has a chewy outer sheath with a tender inner grain.
  • A striking grain with a nutty, earthy flavour and distinctive smoky aroma, with slight bitter notes.
  • The rice keeps its dark colour, even after cooking, adding character to any dish.
  • Gluten free.

Cooking instructions for covered pan (or absorption) method: 

  1. For 2 servings use 120g of Tilda Wild Rice or 1 cup.
  2. Wash the rice under cold water using a sieve or colander, or rinse in a pan until the water runs clear. This vital step prior to cooking removes any excess starch, giving you more separate grains, while bringing out the rice’s distinct aroma.
  3. Add 330ml of water with the washed rice to a saucepan. The correct ratio is important to make sure the grains cook perfectly – not too dry or slightly soggy.
  4. Stir, cover and cook the rice for 50 minutes over a low heat.
  5. Remove from the heat, keep covered and leave to stand for 3 minutes. It’s important to keep the pan covered to ensure the grain is cooked perfectly. Standing also steams the grains to further elevate your plate. 
  6. Fluff it up with a fork and serve. 

Cooking instructions for open pan method:

  1. For 2 servings use 120g of Tilda Wild Rice or 1 cup. 
  2. Wash the rice under cold water using a sieve or colander, or rinse in a pan until the water runs clear. This vital step prior to cooking removes any excess starch, giving you more separate grains, while bringing out the rice’s distinct aroma.
  3. Add a minimum of 1L of water with the washed rice to a saucepan and bring to the boil.
  4. Stir and cook for 45-50 minutes over a medium heat, uncovered. 
  5. Drain, cover and leave to stand for 3 minutes. 
  6. Fluff it up with a fork and serve.
