Portuguese Garlic Shrimp

Ready in minutes yet sophisticated enough for entertaining, this speedy shrimp dish with rice is elevated by fresh herbs, citrus and a splash of white wine.

  • 2 pkg (each 8.5 oz) Tilda® Ready to Heat Peri Peri Rice
  • 1/4 cup olive oil
  • 1 lb peeled, deveined, tails-removed large shrimp (16–20 count)
  • 4 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste
  • 1/3 cup dry white wine
  • 2 tbsp fresh cilantro, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • Lemon wedges, for serving

How to make Portuguese Garlic Shrimp

  1. One package at a time, heat rice according package directions.

  2. Meanwhile, in large skillet set over medium-high heat, heat oil. Cook shrimp, garlic, salt and pepper, stirring frequently, for 1 to 2 minutes or until shrimp are starting to curl and turn pink. Stir in tomato paste. Cook for 1 minute. Stir in wine and bring to a boil. Cook, stirring frequently, for 1 to 2 minutes or until shrimp are cooked through.

  3. Serve shrimp with rice. Garnish with cilantro and parsley. Serve with lemon wedges.

  4. Recipe Tip: Substitute white wine with an equal amount of non-alcoholic wine or chicken broth accented a squeeze of lemon juice.
