Italian Rice Salad

  • 1 cup Tilda® Pure Basmati Rice
  • 5 Tbsp extra virgin olive oil
  • 2 Tbsp lemon juice
  • 1 Tbsp Italian seasoning
  • 1 tsp garlic, minced
  • ½ tsp kosher salt
  • ¼ tsp black pepper, ground
  • 1¼ cups artichoke hearts
  • ½ cup pitted green olives
  • 1 14-oz can cannellini beans
  • 1 cup cherry tomatoes
  • 2 Tbsp capers
  • 1⅔ Tbsp flat-leaf parsley, roughly chopped
  • 1⅔ Tbsp basil, roughly chopped

How to make Italian Rice Salad

  1. Prepare the rice according to pack directions.

  2. In a medium bowl, whisk together the olive oil lemon juice, Italian seasoning, garlic, salt and pepper.

  3. Add the artichoke hearts, olives, beans, tomatoes and half of the parsley and basil to the bowl and mix well.

  4. Gently fold the rice into the salad and garnish with remaining herbs.
