Feta & Olive Rice Salad

  • 2 pouches Tilda Pure Basmati rice or 2 1/2 Tilda Pure Basmati dry rice
  • 1/2 cup of black olives
  • 2 red onions, sliced
  • 1/2 cup feta cheese, cubed
  • ½ cup Mixed peppers (red, yellow and/or green), diced
  • 2 tsp za’atar or barharat mix spice
  • 1/2 cup parsley or mint
  • 1 cup chickpeas
  • 2 preserved lemons

How to make Feta & Olive Rice Salad

  1. Heat Tilda Pure Basmati rice according to pouch instructions and place into a serving bowl.

  2. Mix in the olives, peppers, onions and feta, as well as the spice mix, herbs and chickpeas.

  3. Squeeze over the lemon before serving.

  4. If you are using Tilda Pure Basmati dry rice, please cook rice according to package instructions.
