- 1 pouch Jalapeno Fiesta Rice Bowl
- 1 tbsp sunflower oil
- 1 red onion, chopped
- 1 red pepper, chopped
- 1 can of black beans, drained
- 1/3 cup sweet corn
- 1/3 vegetable stock
- Salt & pepper
- ½ cup fresh cilantro, chopped
- 1 lime, cut into wedges
How to make Jalapeno Fiesta Rice Bowl

Heat oil in a large pan on medium-high heat. Saute the onions and peppers for 5-7 minutes or until softened.

Add the sweet corn, black beans, rice and vegetable stock. Heat until the liquid is absorbed. Season well

Serve garnished with the cilantro and lime wedges
