- 1 packet of Tilda White and Brown Steamed Basmati
- 50g of shredded, cooked beetroot
- 100g of feta cheese, crumbled
- A large handful of green curly kale leaves
- A handful of coriander, finely chopped
For the dressing
- The juice of 1 orange
- 8 tsps of sweet chilli sauce
- 4 tsps of olive oil
- Salt and pepper to taste
- 1 tsp of chia seeds
How to make Beetroot, Kale & Feta Salad With Orange & Chilli Dressing

Mix together the cold rice, shredded beetroot and coriander

Gently stir through the crumbled feta cheese

Arrange the kale leaves on a large serving dish and spoon over the rice mixture

Make the dressing by blending the orange juice, chilli sauce and olive oil

Season the dressing to taste and stir in the chia seeds

Drizzle the dressing over the salad and serve
