- 2 pouches Tilda Pure Basmati Rice or Tilda Long Grain Rice
- 2 tbsps. sunflower oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 1 red pepper, chopped
- Handful mushrooms, chopped
- 1 tsp mild chilli powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 2 tsps. dried mixed herbs
- 1 tbsp tomato puree
- Salt and freshly ground black pepper
- 1 tin red kidney beans, drained
- 1 tin chopped tomatoes
- 1 small tin baked beans
How to make Easy Vegetarian Chilli

Heat the oil in a large non-stick pan and fry the onions, garlic, red pepper and mushrooms for 5 minutes over a medium heat, stirring occasionally.

Add chilli, smoked paprika, cumin, herbs and tomato puree and cook for a further 5 minutes.

Season well with salt and pepper.

Add the beans, tomatoes and 100ml water and simmer for 10 - 15 minutes.

Heat the rice in the microwave or pan according to pack instructions. Heap chilli onto the rice and serve
